Rub the rim of a margarita or large cocktail glass with the lemon or lime wedge (if you are going to salt the rim).
Turn the rim of the glass in a bed of salt (if desired).
Fill a mixing glass with ice.
Add tequila, blue curacao, sour mix and lime juice.
Shake.
Strain into the glass.
Add ice cubes (if desired.)
Garnish with a cherry or lime wedge.
Shake: To violently agitate with ice, to disperse or incorporate heavier ingredients
Speed Shake: To agitate with ice, to disperse or incorporate heavier ingredients in service glass with ice.
1. In mixing glass fill 1/3 with ice.
2. Add liquor and/or liqueur.
3. Add mixer.
4. Place metal cup or base over top of mixing glass(making sure metal cup is sitting on evenly, not at an angle).
5. Give top(bottom of metal shaker) a slight tap to cause a vacuum.
6. Pick whole unit off the bar and flip it over, so that metal is to the floor and glass is to your shoulder.
7. In a quick even movement, move unit back and forth in rapid succession.
8. At the end of shake, position unit so that metal shaker is still on the bottom. Hold unit in left hand, down low near base. Keep hands away for frost line area.
9. Look at metal cup for frost line. Next step is to look at top of mixing glass...for the side that is straight and not at an angle.
10. With left hand holding unit for balance, hold right hand at an angle and hit metal shaker at frost line to break the vacuum.
